Profile: Hordeum vulgare, which originated in western Asia and northeast Africa, was one of the first cultivated crops. Before the plant produces a stem or grain, the sensitive immature barley grass leaves are harvested. The leaves are dried and crushed into barley grass powder, which is then consumed for its nutritional properties. Barley grass is developed by soaking the seeds in clean water until they germinate and form 2 inch (5 cm) tall shoots.
