Baldwin is a truly all-purpose old American heirloom. Its thicker skin gives it good storage ability and resistance to pest and disease. The flesh is juicy, crisp, and exceptionally firm; it holds its shape very well for baking. The flavor is sprightly and pleasant, with high sugar and acidity. Baldwin does not produce viable pollen.
