Forged by hand at Andy's Connecticut studio, this newest custom build brings a 52100 high-carbon steel blade to the cutting board in proportions destined to make it any chef’s full-size daily workhorse, balanced by refinements that allow the most delicate cuts to be performed with finesse and precision. Silky, hand-sanded satin bevels descend from forge-finished flats that bear the subtle marks of its hand-hammered origins. Skillfully honed with symmetrical, convex geometry for world-class cutting performance and effortless food release, the bevels culminate at a near-zero edge as thin and sharp as any chef could ask for. Out of the handle, the blade’s spine is wide and sculpted by heat and pressure, offering a comfortable, tapering surface for the fingers when held in the pinch grip. The spine then narrows gradually along most of the 238mm / 9.37" length
