From the creation of its exceptional copper damascus cladding to the forging of the profile, honing of the edge, and final finishing, this one-of-a-kind chopping tool was crafted by hand in Martin’s studio in Austria’s far north. Built to move through vegetables with speed and authority, the knife’s weight, balance, and bevel geometry above the razor-sharp ApexUltra edge are all tuned with a single goal in mind: cutting performance and efficiency. A center of mass positioned nearly two inches forward of the blade’s 94mm-tall heel allows the especially thin 187mm / 7.3” edge to fall naturally through ingredients, gravity assisting each cut while the chef’s hand guides the work.
