Deep Space French Chef 211mm
Dressed in rare, vintage grey Westinghouse micarta with black stripe that Don has inlaid with deep space Corian and secured with a series of hand-peened steel pins comes the latest one-of-a-kind culinary creation by Mr. Andrade. Forging the 1095 carbon steel to shape at his Los Osos, California studio, Don creates a striking, honyaki workhorse including clay-less hamon revealed with beautiful contrast by his polishing and etching process. The silky, hand-sanded satin bevels are precisely honed with pronounced convexity for cutting performance coupled with strength, the thin, razor-sharp edged backed up by a stiff, sturdy spine with only slight distal taper before slimming in the final stretch to a slim, pointed tip. Balancing just at the point that the blade's 49mm-tall heel meets micarta, the knife's sculpted, Western-style handle is at home in the hammer grip while providing equal comfort and control when choking-up in the pinch grip. A custom, cloth-covered saya is included.
