Santa Maria–style barbecue originated in the mid-19th century when local California ranchers hosted Spanish-style feasts each spring for their vaqueros. Our blend consists of 8 spices hand mixed in our laboratory. This rub pairs well with Tri-Tip, Brisket and just about any other beef dish.
