In 2019, we helped Mrs Na to make modifications to the washing station with the aim of ensuring consistent quality even at larger volumes. PROCESSING INFORMATION Washed coffees are first pulped and then fermented for 12-18 hours. Cherries are then run through density channels before being spread out on concrete drying patios for approximately 10 days. About the Farm " At 400 tons per harvest Dongka is our largest volume producer and has some of the most consistent specialty grade washed coffees in the Menglian region of Yunnan. Mrs Na owns and operates the wash station. She buys all her cherries from the farms on the mountain around the wash station and it is in a quasi contractual way, so she buys the same crops every harvest. Mrs Na and her family are locals that focus on relationships in their coffee business. About 4 years ago the Dongka station made improvements to both increase the volume, quality and ensure consistency. Harvest is from November to February. Dongka is at 1400 MASL. All the coffees here are washed and a patio is used for drying. Variety is cartimor. The cherries are first pulped and then fermented for 12-18 hours. Patio drying is about 10 days. The “Wa” tribe are the main pickers for the Menglian region. But picking is also done by the Akha, Dai and Lahu tibes. Farm owners and wash station owners are the Han people"
