Macedonian peppers are famous for their flavor and the Ajvarski is no different. Glossy, wonderfully fragrant, tasty and large, the cone-shaped fruits of the Ajvarski peppers are perfect for roasting. The stocky, dense plants grow to 2 feet and are covered in 6-7 inch long fruits. In their native land, these thick-fleshed sweet peppers are roasted on flat metal stoves, peeled, then ground into a traditional spread called Ajvar, which is most often eaten spread on bread and topped with cheese. These grow incredibly well in our Connecticut summer and produce large amounts of perfect roasting peppers, whether you want to make Ajvar or not!
