AKA Chinese Spinach or Yin Choi. The purple red oval leaves of this beautiful variety have a bright green margin. The plant produces a high yield of tender leaves. Leaf Amaranth is a popular green in Asia as it is both heat and drought tolerant. The leaves are tender and their flavor is delicate, making them a perfect addition to salads, stir fries or simply lightly steamed. This is by far the most tender and sweetest amaranth for edible greens. The beautiful leaves make a perfect spinach substitute when all others have bolted.
