Roaster's Notes: When I think of this coffee and drinking it, I think of perspective in the morning. Just in life in general. This coffee allows me to just focus on what is in front of me and then I can move on with the plan I was thinking of. But what is more important to you is my thoughts on this Mexican Organic coffee. This coffee is not a flavor bomb in your mouth like other coffees we roast at Everyday Beans. But it is a deep chocolate punch that mellows out with a calming after taste. To me, this coffee doesn't try to be anything different than what it is. It does sing one note, all the time. But when that note is chocolate forward, that's not a bad thing. This coffee is great as black but truly shines as a creamer type of coffee. To taste this coffee at a subtle way, I suggest a 15:1 ratio with the coffee maker of your choice.
