Domaine du Cros 'Lo Sang del Pais' Marcillac 2023 (Southwest France)
Let us introduce you to the Fer Servadou grape (a.k.a. Mansois), a little known varietal rarely found outside of the Marcillac AOC in Southwest France. ‘Lo Saing de Pais’ means ‘blood of the soil,’ a nod to the iron-rich soil of Marcillac that lends a hint of minerality to this fun red. We get dark brambly fruit mingling with herbs, black pepper, that lovely minerality, and just a touch of earthiness. Soft, gentles tannins and a refreshing acidity give this wine a delightfully clean finish. We like to chill this bottle down for 20-30 minutes to bring out the juicy fruit. 100% Fer Servadou (a.k.a.
