Valldolina 'Tutusaus' Cava Gran Reserva Brut Nature 2021 (Penedes, Spain)

Raimon Badell is making biodynamic and organic vintage Cava from his estate in Alt Penedès, which is located entirely within the national protected area of the Massís del Garraf. This Brut Nature Cava, a blend of Xarel·lo, Macabeu, Parellada, & Chardonnay, is made with the idea of a  “Grower Champagne” in mind- dry and elegant and reminiscent of French Cremants, Champagne Bruts, and Blanc de Blancs. The name Valldolina [vai-doh-LEE-nah] is a description of the landscape. Dolines are depressions formed in areas that are rich in limestone soils, while 'vall' is Catalan for valley. Thus, Valldolina = valley of dolines. ABV: 11.5%
