The Zillamina Blanco is crafted by Ana Amat Sáez of Bodegas Pinoso, a wine cooperative started in 1932 that has pioneered organic viticulture in the Valencia region since 1997 (Ana has been the head winemaker since 2010). Nestled along the Serra Calderona mountain range and hugging the Mediterranean Sea, Valencia’s hot, dry climate and coastal influence create the ideal environment for low-intervention viticulture.  This blend of 51% Airén and 49% Macabeo is fresh and lively, with bright notes of green apple and Mediterranean herbs on the nose. The palate is bursting with notes of lip-smacking citrus balanced by just enough ripe fruit and a subtle, sea-breezy minerality on the finish. Food Ideas: Lemon garlic pasta with scallops, peach & burrata salad with tomatoes and speck, coconut-miso fish curry, gazpacho! ABV: 12%
