Leg shank is a cross cut of the front leg of the beef and includes a marrow bone at the center. It is wonderfully flavorful and best braised to let that marrow seep out into your dish. Our leg shank comes sliced into 2 inch segments and averages 2 lbs per package or we also offer Thor's Hammer- a cut that retains a larger section of the bone.
