This perfect combination of the strip steak and the tenderloin (filet mignon) makes for the perfect combination of tenderness and flavor.  We farm kids didn’t know how lucky we were to have packages of T-Bones in the freezer all the time.  Great prepared on the grill, under a broiler, or pan seared.
