Off the coast of Brittany, France lies the Île-de-Groix, a tiny little island with wild terrain and sparse population. La Ferme de Port Coustic is a poycultural farming endeavor by Mathieu le Saux and Noémie Vallélian, who (naturally) make their wines, ciders and brandies without additives or commercial yeasts. Their pear cider from a nearby organic farm, is off-dry with taut tannins and lively acidity; the delightful bubbles are from the fermentation that continues in the bottle after it is capped. 5.5% abv
