MOUNT EDEN PINOT NOIR ESTATE 2021

The Estate Pinot from Mount Eden is the essence of mountain fruit.  Dry-farmed and at over 2,000 feet, this pinot dazzles with elegance and purity of fruit. Using natural yeasts, fermentation is conducted in small open-top fermenters, then new wine is immediately put into 75% new and 25% one-year-old French Burgundy barrels. It matures for eighteen months before being bottle unfined and unfiltered.   A perennial shop favorite for elegance and complexity -- just gorgeous! A natural winemaking approach is followed with minimal intervention.  Vineyards are dry farmed, native yeasts are used and fermentation is spontaneous.  The wine is estate bottled and unfiltered.
