For the discerning palette, this is a selection of our premium steaks.  These tenderloin medallions are a quick and easy delicacy. Brush with duck fat, butter or olive oil and sprinkle with salt and pepper. A quick sear it on the grill or cast iron pan and you have a beautiful, tender steak for dinner. We like it best served rare or medium rare. This cut cooks fast, so don't stray too far from the grill or stove. In our opinion, this is the quintessential steak. Boneless or bone-in, there are followers in each category. But we at the farm agree, a yak ribeye at the end of a hard day makes everything better! and shockingly, on a good day, it makes everything better. There's just no way to go wrong with a ribeye. No offense to the New York Strip folks. Those are also terrific. Just remember it cooks faster than beef and you're golden. This cut has a dedicated following, and for good reason.
