Wild Dover Sole
DISTINCTIVE QUALITIES: Dover Sole is truly unlike any other finfish. Its texture is firm yet flaky, and its flavor is mild, yet sweet. When cooked, the fillet maintains its pristine, pearly white color. In addition to its unique and desirable flavor, Dover sole makes a beautiful presentation when deboned tableside. Described more as a more meaty fish option, its texture easily absorbs complimentary sauces and preparations that European chefs often pair it with—think Meuniére (lightly floured and pan-fried with brown butter, lemon, and parsley). Wild and ocean-fresh from the waters of the Dover Strait between England and France, these royal fish are flown directly to us every Monday—only on Mondays can we ship them fresh for Tuesday delivery. On other ship dates, you will receive flash-frozen Dover sole (unless you specify "fresh" at checkout). Chef's Tip: Pre-order prior to, or on Monday.
