The Maison Herout Micro-Cuvée No. 3 is a gourmet cider that is aged for at least 6 months  in barrels that previously held chardonnay and pinot noir wines. After a natural fermentation leading to very fine bubbles, the cider is bottled and put on slats for at least 20 months before being disgorged.  A fine tannic structure with notes of fresh pears.
