Shank - Osso Buco

This is a thick 2” round from the leg of the beef, and each package contains 2.  These are incredibly flavorful and make the most amazing Osso Bucco dish, but can also be added to any soup/stew you want to make.  Because this cut includes the bone, it is filled with amazing marrow.  Shanks add great flavor, nutrition, and thickening (from the marrow) to whatever you add them to.  This cut is off the leg, and has the marrow bone in the center, making these great for a “long & low” simmer to allow the meat to become tender and the marrow to release. We feel this is one of the least appreciated cuts.
