These smaller whole chickens make great soup, stew and broth. Seasonally we process our oldest laying hens and because of their age they have a great fat layer and have more flavorful meat than the typical broiler/roaster. One of the best ways to harvest the delicious meat and fat off the bones is to put it in a soup pot with herbs and veggies and cook until the meat falls off the bones, or you can quicken the process by putting it into a pressure cooker (Instant Pot). And, don’t forget to use the bones to make some amazing bone broth!
