Common name: Maitake or Hen of the WoodsFruiting Temperature: 50–60 °F Maitake is a delicious, soft-fleshed polypore that grows in northern, temperate deciduous forests. It grows well on hardwood sawdust/chips/bran, and typically produces one large mushroom per flush. This species requires more attention to detail than other mushrooms.
