Okinawa Spinach
Product Description: This Asian vegetable comes as a fully rooted plant, and will be shipped in a pot with high quality organic soil. This is a beautiful bi-color perennial leafy green belonging to the Asteraceae or sunflower family. It’s name is Gynura Crepioides AKA Okinawa Spinach or Gynura bicolor, and it is not related to spinach. Okinawa Spinach is rich in vitamins A and C, calcium, potassium and protein. This leafy green grows best in part shade to mostly shade. It grows up to around 2 FT tall. To keep encouraging the plant to grow full and lush, snap off the tender stems and leaves to eat. Keep soil moist, and protect from frost. The flavor of this vegetable seems to taste better when grown in more shade than sun. When eaten raw, it has a succulent, crisp texture with nutty flavor. It’s great in salads, soups and stir fry. The leaves do take on texture similar to spinach especially when cooked. As we know that purple color in plants contain anthocyanin which is helpfu
