Spanish Paprika, Sweet, Smoked
Of the two main Paprika (Pimenton) production regions in Spain, Pimenton de la Vera is where Spanish Smoked Paprika comes from. Using four different types of peppers (Jaranda, Jariza, Jeromín, and Bola) the peppers in this region are hand-picked and slowly smoked for 10-15 days before grinding to build up their characteristic smokey flavor and deep red color. Of the three spice levels of Smoked Spanish Paprikas (dulce-sweet, agridulce-bittersweet, and picante-hot), at Gather we like to use the sweet smoked for an all around smokey smoothness!
