The Muschelkalk or German for ‘shell-bearing limestone’—is a sequence of sedimentary rock stretching through central and western Europe. This Middle Triassic (240 to 230 million years) deposit, originally formed in a land-locked sea, and its banks contain a plethora of fossil shells found on the surface or subsurface. The vines of this particular plot, like many of the domaine, are surrounded by woodland; thus Bruno terms it ‘the marine within the forest.’ The grapes are harvested by hand and sorted twice before being direct pressed as whole clusters using agentle pneumatic press. The wine isn’t fined or filtered and it is aged 12+ months in large Alsatian wood barrels. This wine is brimming with dried stone fruit, honeycomb and oolong tea. Pair this wine with a smoked pork chop with grilled onions and apples, a quiche loaded with veggies and fontina, spicy Asian dishes, including West Asia. A very versatile and stable wine!
