Gluten Free Carrot Cake Mix

Carrot Cake is a tasty dessert that is practically a vegetable, right?  Well, maybe not, but this mix calls for 1 lb. of fresh carrots to make it moist and flavorful.  It is one of our most requested cake mixes for non-gluten free folks; and with good reason.  It is all flavor with just the right mix of cinnamon and other spices.  This cake is also naturally dairy-free.
