Mac mixes in a batch of already-aging maeju to a fresh batch of soybeans. This combination accelerates the fermentation process to create an extra-rich, pungent maeju. The soy sauce is extracted and filtered from the maeju and left to age for another full year! Mac recommends using this particular Soy Sauce for seasoning Korean Soups or Stews.
