SOUTH RIVER ORGANIC SWEET WHITE MISO
South River Miso is hand-crafted and aged in wood in the centuries-old farmhouse traditon of Japan. Central to their process is the long, slow cooking of the beans by wood fire with a massive masonry stove. Their time-honored methods create the rich flavor and distinctive whole-grain texture common to all miso made before modern food processing. Famous to the Kyoto region of Japan, this miso has a relatively sweet flavor and smooth, creamy texture. Sweet White Miso has the lowest salt content of all the varieties we make. It also has the shortest fermentation time and is the only variety we mechanically purée. Sweet White Miso is delicious in spreads, dips, sauces and salad dressings; or for seasoning light soups. South River Miso is fermented and unpasteurized, so it will continue to ferment in the jar. In warm or hot weather, the natural fermentation may cause the pressure to build up and some leakage may occur. This is normal and attests to the fact that it is a living food, loaded
