Catskill Provisions is one of our favorite producers and their Pollinator Spirits Honey Rye Whiskey is a handcrafted spirit that blends the bold character of New York State rye with the subtle sweetness of raw wildflower honey. Produced by a woman-owned distillery in the Catskill Mountains, this whiskey reflects a dedication to sustainable practices and environmental stewardship. The mash bill consists of 80% rye and 20% malted barley, sourced from local New York farms. After small-batch distillation, the whiskey is infused with late-summer raw wildflower honey harvested from hives in the northwest Catskills. It is then aged in charred American oak barrels, allowing the flavors to meld and mature beautifully.On the nose, this whiskey offers warm, spicy aromas with hints of toffee and sweet citrus.
