Hillrock Solera Aged Bourbon
Hillrock Estate Distillery's Solera Aged Bourbon is a pioneering American whiskey, distinguished as the first to employ the traditional solera aging method, a technique historically reserved for Sherries, Ports, Madeiras, and Cognacs. This intricate process involves a tiered system of barrels, where a portion of whiskey is periodically drawn from the lowest tier and replenished with younger spirit from above, ensuring that no barrel is ever fully emptied. Over time, this method fosters a harmonious mingling of ages, enhancing depth and complexity. The bourbon is finished in 20-year-old Oloroso Sherry casks, imparting distinctive floral notes intertwined with flavors of fig, roasted walnuts, candied fruit, and a touch of spicy rye.
