Known for its amazing tenderness, we only get one of these steaks per animal! It's similar (maybe even bolder) in flavor to skirt or flank steak and can be used interchangeably in recipes. A long membrane runs down the middle of this steak holding it together - make sure you cut that part out prior to preparing so that the center of your steak isn't chewy.  Packaged: One steak (choose size).
