Saint AIX 2011 Appellation: Coteaux d'Aix en Provence Grape varieties: Grenache, Cinsault, Syrah, Counoise Situation: Located on a plateau 420 meters above sea level Vinification: 30% of rose bleeding and 70% direct pressing. Temperatures between 11 and 13 degrees Celsius Culture: Work soil, entirely organic amendments phytosanitary treatment Characteristics: pale pink color and light. The nose has a lot of finesse, a sweet floral mouth attack and a good structure and long aftertaste. To taste: with grilled fish and white meat. Exotic flavors: Goes with chicken curry. Serving between 8 to 12 degrees Celsius. Exposure: Vineyard exposure facing South West, with often a Mistral wind for natural protection of the vines. 300 days of sunshine a year and cooler nights for optimal grape maturation. Terroir: very poor soil, clay and limestone, some plots sandier. Rich in minerals.
