Grapes: Barbera 100%Harvest: The integrity of the bunches at the time of crushing is safeguarded with the use of manual and mechanical techniques.Vinification and Refinement: Crushing and destemming; fermentation in stainless steel at a controlled temperature of 28-30°C; maceration on the skins for 8 days, with daily pumping of the must over the cap. Aged for 12 months in oak casks.Tasting Notes: Rich structure, expansive bouquet showing ripe fruit, mouth filling, long finish.Food Pairing: Fondue, lasagna, stewed meat, grilled fillet, mature cheeses.Suggested Serving temperature: 62°-64° F.
