Falanghina, a white varietal with a rich history, is grown in the Campania region east of Naples. In its traditional form, this wine pairs beautifully with the exceptional seafood of the area. Despite its ancient roots, there are modern iterations that lean towards an international style, with excessive ripeness and weight. However, this is not the case with Aia Dei Colombi Falanghina. The grapes are hand-harvested in late September and undergo a quick pressing before being fermented at cool temperatures to preserve the delicate aromatics. The resulting wine boasts intriguing notes of minerals, citrus, and florals on the nose, making it a perfect companion for fish and shellfish.
