Our Stolghino salami is made by coarse grinding 75% of the noble part of the pork leg and 25% of the pork belly. Seasoned with Lambrusco, "droga", allspice, garlic, sea salt and cracked tellicherry black pepper. Encased in hog casings, fermented and hung to dry for 20 days. Ingredients: Heritage Pasture Raised Pork, Lambrusco, "droga", allspice, garlic, sea salt and cracked tellicherry black pepper.
