Hanger Steak (Hanging Tender)

This morsel of dry-aged beef is so tender we wish there were more than one on every cow. To give you all the good stuff, ours are sold whole, with both halves still connected in the middle. Remove the center membrane with a knife for two superb grass-finished steaks that won't disappoint.
