A quick-cooking, delicious cut of beef, Skirt Steak is famous for its tenderness and ability to hold added flavors. We like to soak ours in garlic/citrus marinade, cook it to medium rare on a ripping hot grill, then thinly slice it across the grain. We load up small tortillas (corn or flour, you pick) with the tender, juicy strips. Top with guacamole, pico de Gallo, and fresh crema, and it's about as good as it gets. You probably already have the ingredients for this delicious skirt steak marinade from Creme de la Crumb in your fridge (we almost always do, too)!
