  Apple cider vinegar, otherwise known as cider vinegar or ACV, is a type of vinegar made from cider or apple and has a pale to medium amber color. Unpasteurized or organic apple cider vinegar contains mother of vinegar, strands of proteins, enzymes and friendly bacteria that give the product a murky, cobweb-like appearance. In short Apple cider vinegar with the mother is simply unrefined, unpasteurized and unfiltered ACV. The “mother” is a colony of beneficial bacteria, that helps create vinegar through a secondary fermentation process. ACV is made by crushing apples and squeezing out the liquid. Bacteria and yeast are added to the liquid to start the alcoholic fermentation process, and the sugars in the apples are turned into alcohol. In a second fermentation process, the alcohol is converted into vinegar by acetic acid-forming bacteria.
