Produced from 100% Cinsault, the grapes are crushed with a traditional Zaranda, or press, which allows for partial carbonic maceration during the fermentation process. After four days the grapes are pressed and the wine, still fermenting, is racked into a stainless steel tank where it completes fermentation.
