This one is the invention of our 18 year long kitchen manager - Mayra. We had an abundance of fresh quince and she thought that cooking them down into a butter would be a real treat! I am so glad she thought of it. The sugars get nice and carmel-y in a slow bake in the oven. WHAT A TREAT!! Wonderful on a cheese board and sure to delight your senses. Beautiful.
