Coconut-Sweet n Sour Fruity Vegetable Curry Decadent mix of Caribbean & ghost peppers mingled with delicious pineapple & coconut. Chick peas add substance and the aromatics like ginger give flavorful energy to create a tasty amalgam somewhere between a fruity vegetable curry & a sweet 'n' sour. Can be quite hot & spicy for some folks! I love the flavor and feel of the tropics & wanted to stimulate the senses and create a picture of a day at the beach. Graze on curry conch or fried fish then slurp on a chilled cocktail under the shade of beach awnings & swim in the azure-emerald seas.  Later chat at the roadside fruit stand to select the freshest and unique local produce like the sweet black pineapple to make a silky vegetarian curry when we return home.
