A sweet, smooth, fiery combo of peach ghost peppers, golden beets, yellow carrots, garlic and onion. Our secret ingredient is foraged spruce tips. The beets provide an earthy sweetness, while the spruce adds a herbal lightness. A lot of tasters have guessed it has a berry base, which shows how wildly fermentation can twist flavors. Our 2026 batch is a gorgeous golden orange, thanks to the unique root veggie varieties our farmers grew. All the ingredients in the sauce were grown by Washington farmers and fermented for about 6 months. We wanted to capture the feeling of a PNW forest, and I think this comes close.
