Obtained by destemming and soft pressing of the grapes with manual vertical hydraulic press, following a maceration of 7 days. Alcoholic fermentation takes place spontaneously in small 1000 litre steel vats, thanks to the indigenous yeasts present in the skins and without temperature controls. Bottling takes place without filtering or clarification.
