Tuscan kale is known by a few different names, Lacinato, or Dinosaur kale. A great salad kale, chop into .5" - 1" ribbons, massage lightly with olive oil and dress. Can also be slightly warmed in a pan with olive oil and garlic, and will hold its form and texture.
