The Mature Harvest is rounder, softer, and buttery—crafted from fully ripened fruit for a smooth, mellow finish.   Use the Early Harvest to finish salads, grilled vegetables, or crusty bread. Turn to the Mature Harvest for slow roasts, baking, or everyday cooking. This set captures the full spectrum of flavor our groves have to offer.   Each bottle is made start to finish by us—harvested, milled, and bottled on site. No middlemen. No shortcuts.
