Estofado Sauce

Estofado Sauce is a version of a yellow mole sauce. Traditionally, mole contains Mexican chocolate and dried chilies as its main ingredients, but this version is very earthy. El Molcajete does not add chocolate but instead, makes their version with olives, almonds, fresh cinnamon imported from Mexico and aromatic cumin.  Try it on roasted chicken and white rice, roasted corn, pork chops, and rack of lamb.
