Another lot produced by Ture Waji, Laayyoo is a striking expression of high-elevation Ethiopian terroir, produced by smallholder farmers near Teraga and processed under the thoughtful leeadership of Ture at Sookoo Coffee.  Named after the indigenous Laayyoo tree, whose nutrient-rich leaf litter nourishes the soil. Harvested between 2200–2350 meters, cherries are delivered at night to the Haro Wachu drying station to limit exposure to heat and unwanted fermentation. After meticulous sorting, two distinct simultaneous drying protocols are used — single-layer drying delivers clarity and structure while double-Llayer drying (max. 8cm) promotes deeper fermentation flavors, winey complexity and a juicier profile, carefully monitored to prevent mold and over-fermentation.
