A traditional wine of the Jura region.  In fact, this style of wine can only be made with grapes from the vineyards surrounding a single town.  While it ages, the barrels are not topped up.  This lack of cellar work results in a layer, or veil of yeast that forms over the wine and gives it a nutty, sherry-like profile.  This is a perfect pairing for cheeses, especially the traditional cheese of the region, Comte.
