Coffee overview Brayan Joven is a new-to-us producer; while we encountered his coffees before, this is the first year purchasing his renowned Pink Bourbon lot. The exceptional processing on this coffee has yielded a set of notes including some complex florality and tea-like nuances that compliment an upfront stonefruit acidity. This lot is not as punchy or intense as previous Pink Bourbons but offers a dynamic complexity that makes this Pink Bourbon very unique. Coffee flavor profile White peach, orange blossom, jasmine. Will be interesting to track this one with rest. We use 60 hardness, 20 buffer water heated to 198F in all of our recipes. Information Farm
